Butternut Squash & Sage Pizza


1 Pillsbury Pizza Dough or any kind of Vegan Pizza Dough
1- 2 tbsp Cornmeal
1 tbsp of Vegan Margarine
1 small onion finely chopped
1 lb butternut squash, peeled, seeded & cubed
rubbed sage to taste or sage leaves
1/2 of a 25.5oz. Jar Muir Glen Organic Pasta Sauce or any Vegan Pizza/Pasta Sauce
1/2 brick of Vegan Gourmet Mozzerella or any Vegan Mozzerella Cheese, shredded
Salt & Pepper to taste

Preheat the Oven to 400 F. Add chopped onion, cubed squash, rubbed sage, salt & pepper to a pan with water & margarine. Steam until the squash is tender & the onions are translucent. Stirring occasionally. Meanwhile spray a pizza pan with oil & sprinkle on cornmeal. Open dough container & unroll dough onto the pan. Spread on sauce. Bake for 5-8 min. Once done top with Squash mixture, more rubbed sage (if desired) & Vegan Mozzerella. Bake for 15 - 20 min. until crust is golden brown (make sure you don't burn it). Slide it in the broiler for 10 seconds to melt & brown the mozzerella.

Mmmm, that sounds yummy! I never thought to put butternut squash on a pizza, what a great idea!
